Chicken Thighs Romanesca - Trimmed boneless chicken thighs shine in this richly flavored sauce with tomatoes, prosciutto, sliced peppers, capers and Italian seasonings.

Jerk Chicken Tenders - Tender chicken tenderloins seasoned with jerk-style spices, seared and topped with a guava pan sauce.

Chicken Pot Pie - A comforting blend of chicken, carrots, celery, onion and peas in a creamy veloute and topped with a flaky crust.

Roasted Stuffed Bell Peppers - Italian (sausage and whole wheat couscous), Taco (ground turkey, brown rice), or Cincy-Style (ground meat, Greek seasonings, orzo).

Raspberry Balsamic Glazed Chicken - Tender chicken breast in a flavorful glaze that will leave you wanting more!  A Cooking Light favorite.

Chicken Roulades with Dijon-Wine Sauce - Boneless breast of chicken stuffed with thin slices of gruyere and prosciutto.  Pan-roasted and topped with a dijon-wine sauce.

Turkey Meatballs in Sofrito Sauce - Tender meatballs combined with onions, peppers and garlic in a flavorful tomato sauce.

Pan-Roasted Chicken with Orange-Brandy Pan Sauce - Lean boneless chicken slices finished with a pan sauce of brandy, fresh orange juice reduction and chicken broth.

Chicken Parmesan - Lightly breaded boneless chicken breasts topped with parmesan and mozzarella cheese.  Served over linguine with spicy marinara.

Chili Cornbread Casserole - This meal-in-one dish is a healthy version of a favorite comfort food.  Ranch-style chili with lean ground turkey, pinto beans and seasonings topped with a layer of homemade cornbread.  A client favorite.

General Tso's Chicken Stir-fry - Chef Gayle's "spa" version of an Asian classic includes red bell pepper, snow peas, and baby bok choy.

Crispy Ginger and Garlic Asian Turkey Wraps - Lean ground turkey sauteed with carrots and mushrooms into a delicious Asian sauce.  Spoon mixture into prepared butter lettuce leaves and enjoy!

Italian Turkey Meatballs - Tender meatballs flavored with Italian seasonings, parmesan cheese, onions and garlic in a zippy red sauce.

Jasmine Turkey Burgers - An unforgettable prize winning recipe from a Personal Chef colleague.  Served with rolls, wasabi mayo and onion/cucumber relish.  A client favorite!

Turkey Tenderloins - Lightly coated with flour, gently sauteed and topped with a light sauce flavored with Italian seasonings.  One of my son's favorites!

Lemon Roasted Chicken - Roasted chicken pieces with the perfect touch of garlic, lemon and thyme.  A special dish that the whole family will love!


Poblano Beef Tips - A Rick Bayless recipe with steak cubes, potatoes and poblano peppers in a spicy sauce.

Lean Lemon Meatloaf - One of Marilyn Harris' most talked about recipes.  One taste and you'll know why!  Prepared with lean ground beef, garlic, fresh parsley and lemon zest, topped with a sweet and spicy glaze.  

Beef Stroganoff - Tender beef cubes in a creamy mushroom sauce.  Served over wide noodles.

Bistro Steak with Mushroom Sauce - Tender filet steak seared to perfection and topped with a flavorful mushroom sauce.

Filet Mignon with Balsamic Syrup and Goat Cheese - Pan seared steaks topped with melted goat cheese and drizzzed with a balsamic reduction.

BBQ Shredded Beef - Slow cooked in a tangy sauce.   Served with cole slaw and crusty rolls.

Shepherd's Pie - A satisfying casserole of lean ground beef, carrots, peas in a thyme and sage seasoned gravy.  Topped with homemade mashed potatoes and baked until bubbly and golden.

Beef Bourgignon - A French stew of beef, bacon, pearl onions and mushrooms in a rich red wine and beef stock based sauce.  Served over noodles or rice.

Beef & Broccoli Stir-fry -A healthy version of a classic Asian dish.  Lean beef tenderloin strips, broccoli, red bell pepper and water chestnuts in a flavorful brown sauce.  Served with your choice of white or brown basmati rice.

Burrito Pie - Layers of flour tortillas, lean ground beef, spicy enchilada sauce, fat free refried beans, roasted chiles, corn and olives baked to perfection. 

Flank Steak in a Roasted Garlic Wine Sauce - Seared Steak, sliced thinly across the grain and drizzled with a savory wine sauce.

Pennsylvania Pot Roast - A Cooking Light favorite!  Lean roast braised until tender in a sauce thickened with roasted pureed tomatoes, carrots, celery and rutabaga.

Thai Beef & Noodles - Lean slices of beef and soba noodles in a flavorful peanut sauce.


Jamaican Jerk Tenderloin with Pineapple Mango Chutney - Cubes of pork tenloin coated with jerk seasoning and in a sweet and spicy chutney.  Served with white or brown basmati rice.

Oven Baked BBQ Ribs - Baby back ribs marinated in a bbq rub and slow roasted until tender.  This is one of my grill ready summer dishes, but it can easily be finished in the oven when you crave that special taste of summer.

Pork Tenderloin Diane - Seasoned, pan seared then roasted to perfection.  Topped with flavorful pan sauce.

Roasted Pork Tenderloin - With maple mustard sauce.  A client favorite.

Pork Tenderloin with Asian BBQ Sauce - Seasoned and roasted pork tenderloin, sliced and garnished with a sweet and spicy "barbecuey" sauce.

Crispy Pork Carnita's - Tender melt in your mouth morsels.  Perfect in a soft tortilla with shredded lettuce, salsa, and sour cream.

Pork Tenderloin with Cider Pan Sauce -  Sliced pork tenderloins finished with an apple cider reduction sauce.

Baked Pork Chops with Parmesan Sage Crust - Thick Pork chops coated in a savory coating and pan-fried.  This is sure to ba a favorite in your house.

Italian Braised Pork - Lean pieces of pork slowly braised in a savory Italian-style sauce.


Baked Ginger Salmon - Salmon Filet baked and basted in a delicious sweet ginger glaze.

Sweet & Spicey Glazed Salmon - Rubbed with a "I Dream of Dinners original" spice mixture, broiled and finished with an orange reduction sauce.

Maple Glazed Salmon - Salmon filet coated with a spicy rub, pan grilled and finished with a drizzle of pure maple syrup.

Oven Fried Fresh Salmon Cakes - If you like salmon patties you'll adore this version using fresh salmon.  Even if you don't like salmon patties you'll love these . . . and crave for more!

Bronzed Orange Roughy Filet - Seasoned and sauteed with a wine butter caper sauce.

Gayle's Crab Cakes - A "crabby" cake with the perfect blend of minced veggies and seasonings.  Served with a homemade remoulade sauce.

Red Curry Shrimp - Large shrimp in a Thai curry sauce, served with rice and garnished with basil.

Greek Shrimp with Feta - Chef Ina's recipe for a Greek style scampi.  Delicious over rice or pasta.

Honey-Garlic Green Tea Shrimp and Veggie Stir-fry - With snow peas, sugar snap peas and julienned carrots.  Served with brown or white jasmine rice.

Shrimp Stir-fry with Tangerine Sauce - Quickly seared with your favorite veggies and finished with a Asian-inspired sauce. 

Sauteed Shrimp with Roasted Red Pepper Cream Sauce - Tender shrimp in a delicious light sauce serve with pasta.


Vegetable Barley Soup - An unforgettable blend of carrots, green beans, tomatoes, garbanzo beans, black beans and seasonings.
